A little bit later during the day, I made some eggplant fritters with a Chinese eggplant that I had. The batter consisted of chickpea flour or besan, a pinch of baking powder, a tablespoon of nutritional yeast, salt to taste and enough water for a pouring consistency. ✿ FULL PRINTABLE RECIPE ✿ ▶ veganlovlie.com/eggplant-fritters These eggplant fritters are a popular Mauritian snack that are sold at street corners. They would usually be deep fried but I pan fried them with less oil. For dinner, I made a béchamel sauce to which I added some spinach, broccoli, mushrooms, peas and sweetcorn. We had this over some brown rice spaghettini.
